The seeds contain 30 to 40% of a strong essential mustard oil, which is usually used in the production of "hotter" mustards.
In European conditions, Sarepta mustard is used in two types, one is dark-seeded (incorrectly black mustard) and the other is yellow-seeded. Dark-seeded has regular brown seeds with typical reticulation on the surface and is used in the production of Kremž mustard. Yellow-seeded has small, deep yellow seeds with a higher essential oil content and is used in the production of oriental mustards.
